hi everyone! i am whitney from eat sleep cuddle., and i am so excited to do a guest post for nicole today!
i love finding new ways to cook vegetables (and fruits), and i wanted to share a recipe with you that is a fun alternative to mashed potatoes.....mashed cauliflower! or mashed purple cauliflower, if you're feeling crazy and can find it at your grocery store. :)
here is the recipe (customized from this recipe).....
1 head cauliflower (of any color), cut into florets
2-3 tablespoons butter
white cheddar cheese
fresh parmigiano-reggianno cheese
chives
salt & pepper
steam cauliflower for 10-15 minutes. transfer cauliflower into a bowl and stir in butter and cheeses until you get the taste you want. * use potato masher or blend in a blender until smooth. season to taste with salt & pepper and add chives.
*you can experiment all you want and add whatever ingredients you would normally add to mashed potatoes. (i.e. sour cream, garlic, etc.). also, if you use purple cauliflower, don't be surprised when it turns a blue-ish color during the steaming/cooking process. :)
I love that clicking on one of my favourite blogs leads me to finding another blog that may quickly reach favourite status. And this looks delish, seriously.
