I am excited to share some of my favorite new recipes that have made these lifestyle eating changes so much easier. And the fact that those last post-pregnancy pounds have disappeared is making me a fast believer as well!!
This recipe for skinny zucchini pizzas is not only gorgeous on your plate, but super delish in your mouth. I created my own version from this I found on Pinterest.

Skinny Zucchini Pizzas
// serves 2 //
2 fresh zucchinis
olive oil (I have also used coconut oil and it tastes just as good)
feta cheese crumbles (optional)
2// Place sliced tomatoes and mushrooms on top of the zucchini.
3// Sprinkle with oregano, basil and sea salt to taste. Drizzle with olive or coconut oil
4// Bake in a 375 oven for 20-25 minutes or until zucchinis are tender
5// Remove from oven and (optional) sprinkle with feta cheese
6// Pair with any choice of meat dishes or enjoy by themselves.
If you really want to make these skinny skinny, you could leave off the feta cheese. I couldn't be bothered in this way, as the tangy taste of several cheese crumbles is worth the extra few calories/un-Paleo-ness! Be sure to let me know if you try these out and tell me what you think!!
