Skinny Zucchini Pizzas

The last two years, I have slowly but surely been moving our diet from the classic American menu to a cleaner eating lifestyle.  It started as gradual changes like whole wheat pasta in place of the enriched white stuff, frozen veggies instead of canned and homemade breakfast burritos for bowls of sugary cereal.  Slowly but surely we are cleaning things up, to the point where now I eat Paleo/Clean about 70% of the time.  But let's just be honest.  I still love my occasional ice cream treat and of course I'm plum addicted to this midnight snack.

I am excited to share some of my favorite new recipes that have made these lifestyle eating changes so much easier.  And the fact that those last post-pregnancy pounds have disappeared is making me a fast believer as well!!

This recipe for skinny zucchini pizzas is not only gorgeous on your plate, but super delish in your mouth.  I created my own version from this I found on Pinterest.

Skinny Zucchini Pizzas
// serves 2 // 

2 fresh zucchinis
fresh mushrooms
small tomato
olive oil (I have also used coconut oil and it tastes just as good)
sea salt
feta cheese crumbles (optional)

1//  Wash and slice zucchinis in half.  Scoop out seeds and place on a parchment lined baking sheet.
2//  Place sliced tomatoes and mushrooms on top of the zucchini.
3//  Sprinkle with oregano, basil and sea salt to taste.  Drizzle with olive or coconut oil
4//  Bake in a 375 oven for 20-25 minutes or until zucchinis are tender
5//  Remove from oven and (optional) sprinkle with feta cheese
6//  Pair with any choice of meat dishes or enjoy by themselves.

If you really want to make these skinny skinny, you could leave off the feta cheese.  I couldn't be bothered in this way, as the tangy taste of several cheese crumbles is worth the extra few calories/un-Paleo-ness!  Be sure to let me know if you try these out and tell me what you think!!
