Almond Vanilla Pancakes // Gluten Free

Today was one of those weird slump days. . . the kind that require a walk in the sunshine, a long chat with a bestie and one whole entire chocolate mug cake to myself.  Those things somehow have a way of making things a little less slumpy.  How was life in your corner of the world?!

In other random news, I'm now I'm here to share with all my fellow Saturday-Morning-Pancake-Addicts, a gluten free alternative that we have fallen in love with in this house.  They have this delicious nutty flavor and take the gluten-guilt out of regular pancakes.  You can thank me this weekend. . . 
 Almond Vanilla Pancakes
// serves 2-3 //
Adapted from this recipe

1 1/2 c. almond meal
2 eggs
6 T. water
2 T. melted coconut oil
1 t. Stevia
1 t. cinnamon
1 t. vanilla

Mix ingredients well.  Cook on a lightly buttered skillet until golden brown.  Serve warm with maple syrup.

  1. Looks delicious! I'm just curious, is there a reason you've been doing gluten-free recipes? Just wanted to know if you had a reason or if you just liked the almond flour better!

  2. these sound amazing! We make our pancakes with almond milk. Never tried almond meal. Something I will have to try soon!

  3. way to go you! I love all this gluten-freeness. I am always curious about trying it, but never do. Except when my brother comes to visit.:) But i want to more! keep it up.
