Family Meals // Week 3

 Chicken Parmesan Wraps. . . so this didn't turn out as awesome or as yummy as I had hoped.  Using this  recipe as a guide, I tried to create my own healthier version with my new favorite cauliflower tortillas.  I spread a layer of chunky marinara sauce on the tortillas and topped it with a piece of pan-grilled turkey breast and shredded parmesan cheese.  Then I threw it in the oven to melt the cheese.  Unfortunately, putting the cauliflower tortillas in the oven with the sauce on top made them a big soggy.

Luckily my husband eats anything and isn't too harsh when it's less than amazing.  Next time, I think I would stick with regular old gluten tortillas and I would probably try shredding the turkey breasts, instead of the chunks.
Week of August 5 - August 9
Monday: Orzo with Feta, Basil & Shrimp {because we obviously didn't get it made last week}
Tuesday: Dinner with friends 
Wednesday: Spaghetti Squash with Shrimp and Mushrooms
Thursday: Gluten-Free Pizza
Friday: Breakfast for Dinner -- Skinny Pancakes, Bacon, & Eggs

At the end of the day, I remind myself that we can't always have pretty food to eat. . . real life just doesn't allow for it.   This would also explain the simplicity of meals this week.  Seems like we have a lot going on right now that craves ease in the evenings.

  2. My version of the Chipotle burrito bowl! Easy peasy. Black beans, lime/cilantro brown rice, spicy chunked chicken, lettuce, cheese, fresh salsa, and a green pepper/onion mix. Yummo! Love this weekly menu girl. And I have got to try those tortillas!
