Family Meals // Week 4

 Skinny Pancakes:  This recipe has fast become a staple in our home.  I grew up in a house where pancakes were a staple.  We would triple and sometimes quadruple the recipe and then sit down to plate after plate of the syrupy stacks.  My brothers could boast of eating over a dozen pancakes in one sitting.

When we recently starting cutting way back on our wheat consumption, it was a dream to find a pancake recipe that doesn't make me feel like I'm missing out on anything.  Plus we upgraded to real maple syrup all the time. . . sorry Mrs. Butterworth, you can take your plastic little party dress somewhere else.
Week of August 12 - August 16
Monday: Italian Tomato Meat Sauce & Gnocchi 
Tuesday: Baked Chicken Meatballs
Wednesday: Grilled Chicken Salad
Thursday: Butter Chicken with Cauliflower Rice
Friday: Pizza Night

I'm super pumped about this week's menu because I will actually have time to try some new recipes.  And they are pretty darn healthy if I do say so myself, so that's a win for the taste buds and the waistline.

  1. I'm afraid we aren't quite as healthy over here, but we certainly enjoy trying new things! And pancakes are definitely one of my fave quick dinner go to meals ;) I personally can't wait to try a new fried rice recipe this week!

  3. So how did your Baked Chicken Meatballs turn out? I decided to copy you, and we had some tonight. Very tasty, even without the bacon. (We're o-u-t. It's very sad...) I served it over blanched zucchini and sweet potato "noodles" and it was great!
