3 Minute Honey Lemon Mug Cake // Paleo

I am rather addicted to making Paleo mug cakes, as they are the perfect mix of sweet and clean when I'm craving something in the afternoons.  There have been two lemons sitting on my counter for too long now and today I decided to see what kind of lemon treat I could create.

I about died when I took my first bite.  This cake is so flavorful and super moist.  I will probably be keeping fresh lemons in my house on a regular basis now. . .
3 Minute Honey Lemon Mug Cake
// Serves 1 //

3 T almond flour
2 T unsweetened applesauce
2 T honey 
1 T unsweetened, shredded coconut
1/2 t baking powder
1 egg
juice and zest from 1/2 a lemon
dash of sea salt


1// Mix throughly in a microwave-safe mug
2// Microwave for 3 minutes
3// Enjoy immediately

  2. I'm writing this as I devour my amazingly delicious honey lemon mug cake... such a light, refreshing change from the chocolate mug cakes out there. I'm going to toss some raspberries in my next go round with this cake!

  3. When I made this it was late at night. I pulled it out of the microwave and added butter, but it wasn't done. I put it back in the microwave and when I pulled it out this time it had all that melted butter in the bottom, so I gently drained it over the trash can. The cake slipped out and scalded my fingers. I shall try this again when I am better prepared to cook and more awake. that one bite was awesome, though!

  5. I know this is an older post but this is AMAZING! I cut the honey in half and used a splash of real, organic 100% lemon juice with a splash of lemon extract and it was fabulous! I also accidentally used coconut flour rather than flakes and it still turned out sooo yummy, thanks!
