Hot Quinoa Breakfast Cereal

If I am able to start my day with exercise and a nutritious breakfast, I feel like I am so motivated to make healthier decisions throughout the rest of the day.

Breakfasts are hard for me because I love cold cereal, toast, donuts, cinnamon rolls, bacon. . .
Are you seeing the pattern here?! haha

This hot quinoa cereal is a new favorite because not only is it chock full of protein but I can manage to squeak in a little sweet by topping it with berries and pure maple syrup or honey.
 Hot Quinoa Breakfast Cereal
// serves 2-4 //

1 c oatmeal
1/2 c quinoa, uncooked
3 c water
1/2 t cinnamon
1 t pure vanilla
dash of salt

Mix all cereal ingredients into small saucepan.  Cover and bring to a boil.  Lower heat to medium and stir occasionally.  Cook for 15-20 minutes or until the quinoa becomes transparent.  Watch closely because it burns easily.  Add additional water in 1/4 cup increments if it becomes too thick.  Eat while hot and top with honey or pure maple syrup and berries.

Extra cereal reheats easily.  I usually make one full batch and then reheat each morning as needed.
